It was so delicious, and everyone gulped it up, no leftovers! I made spiralized butternut squash noodles for myself, and sautéed them quickly in coconut oil to tenderize. Yum!
I wanted to use some steak I had found in the freezer, and it’s been a bit windy and chilly here this week, so I went for one of my favorite Instant Pot meals–Beef Stroganoff. This recipe is in the amazing book, Paleo Cooking With Your Instant Pot by Jennifer Robins of PredominantlyPaleo.com. Even if you don’t follow a paleo diet, if you have an Instant Pot, this is a fantastic cookbook.
Check out the video to see which ingredients I was missing and how I made up for it. I mentioned using Coconut Secret Coconut Aminos Teriyaki Sauce instead of Worcestershire sauce. The link above is to find it on Amazon, but I know it is cheaper elsewhere, such as OneStopPaleoShop ($8.99 instead of $13.88).
I also used Mushroom House Dried Mushrooms, Shiitake, 4-6 Cm, 1 Pound dried shiitake mushrooms, which were mouthwateringly delicious. Right now on Amazon a 1 lb bag is almost $20, which for the amount you get I think would be cheaper than fresh. Also, I bought these in July 2015, and I still have a handful in the bag. They last for quite a while.
I keep them in the pantry for when a recipe calls for mushrooms and I don’t have any on hand. I love the taste and texture. Usually I would need to soak them in hot water for a couple hours before using them, but because I was using the Instant Pot, I just did a rough chop and threw them in with the rest of the ingredients. All but one really big mushroom cooked perfectly.
If you don’t have the cookbook, here are two similar Paleo Beef Stroganoff recipes that I haven’t tried yet, but are from bloggers that always have great recipes. These both are NOT with an Instant Pot, but you can convert it pretty easily, using the Meat setting for 15 minutes. If you try these versions, let me know!
